Instructions
To prepare Koofteh Kashk, you must first cook the rice. For this, wash the rice in cold water and drain well. Then, put the rice in a pot with enough water and a little salt, put it on high heat, and let it boil. When the rice starts to boil, reduce the heat and let the rice become a little pasty. Remove the rice from the heat and drain the water completely. Put the rice in a suitable container and let it cool a little.
At this stage, you need to prepare the Koofteh. To do this, first peel the onions and grate one of them. Take the onion juice well and put the onion in a bowl. Add minced lamb or beef and minced chicken to the onion and mix well. Wash and chop the vegetables well and add to the meat. Break the egg and pour it into the mixture. Add salt, pepper, and turmeric as desired. Now knead the ingredients well with your hands or a spoon until they become uniform, and then leave them in the refrigerator for 15 minutes.
At this stage, you need to shape the Koofteh. To do this, take the size of a tangerine from the mixture for each Koofteh and roll it round with your hands. Then, make a hole in the middle of the Koofteh with your fingers and put some barberries, walnuts, a plum, and onion. Close the hole with the meatball filling and roll the Koofteh again. Place the shaped Koofteh in an oiled tray and refrigerate for 2 hours.
You should prepare the sauce and cook the Kooftehs at this stage. First, peel the remaining onions and grate them with a fine grater. Drain the onions well and fry them in a pot with some oil. Peel the potatoes and grate them with a fine grater. Drain the potatoes well and add them to the onions. Add the desired amount of dry mint and fry a little. Then add enough water and a little salt and pepper to the ingredients and let it boil.
When the sauce starts to boil, slowly put the Kooftehs into the sauce and let them cook on low heat. After this time, add the kashk to the sauce and stir a little to mix well.
